Super easy seed cracker recipe! Perfect with soup, salad, dipped in hummus, topped with salmon & cream cheese & capers. Feel free to experiment with adding your own favourite seeds or grains!
Ingredients
- 1 Cup of Sesame Seeds
- 1/2 Cup of Sunflower Seeds
- 1/2 Cup of Chia Seeds
- 1/2 Cup of Flax Seeds
- 1/2 Cup of Psyllium Husks, Ground
- 1/2 Cup of Unflavoured Protein Powder
- 2 tsp of Salt
- 1/4 tsp of Ground Pepper
- 1/4 Cups of Coconut Oil
- 1 1/4 Cups Boiling Water
- 1 Egg White (Optional)
- 2 tsp of optional seasoning (Italian, Cajun etc.)
Method
Chop sunflower seeds and flax seeds in a food processor if desired.
Then combine all ingredients except egg white in a medium-sized bowl, stir and then let stand for 10 minutes to thicken.
Spread mixture evenly between 4 parchment paper-lined baking sheets.
Using another paper on top, evenly spread mixture to desired thickness (we recommend ~1-2mm), discard top paper.
Apply egg wash. Bake at 150 C on convection for 20 minutes, then remove from oven.
Score with a pizza cutter, flip and bake for ~ 5 minutes more until just browning and crisp. Remove, cool on rack & store in an airtight container.
